Kitchari
Kitchari, also known as Indian comfort food, is made up of Indian Basmati Rice, Yellow Mung Dal (a yellow lentil), and a plethora of balancing spices. Those who want to restore their physiology back to homeostasis or those undergoing a cleanse will eat a diet of kitchari for one, two, five, or even ten days in a row. Many report losing weight, feeling great, and having more energy on a kitchari diet.

Having never had kitchari (although I do love Indian food), I was intrigued by Teacher Scott's simply packaged parcel of ready-to-cook goodness. As it simmered away, the spices filled my house with the most fragrant scent, and now it will be filling my belly for the next three days. Teacher Scott seasons it very delicately as it is meant to be an Ayurvedic cleanse, but I am a heathen and therefore I added powdered ghost chile and a pinch of saffron salt. I will say that the mild and aromatic dish appealed to my gentler nature, but my inner beast won out with regard to ratcheting up the heat factor. Given that I report back to my classroom tomorrow, I packed my lunch just now, and a generous serving of Teacher Scott's kitchari is the focal point of tomorrow's meals. I will definitely be making this again. Kudos to ... [Teacher Scott] for creating an elegantly simple set of meals!
